New Executive Chef and Sous-Chef at the Holiday Inn Hotel & Resort Fredericton
Fredericton, March 26, 2008 -- –The Holiday Inn Hotel & Resort Fredericton is proud to announce
the appointment of Matt Plaster to Executive Chef and Troy Nicholson as Sous-Chef.
Chef Matt Plaster joined the Holiday Inn Hotel & Resort Fredericton kitchen team in 2002 and most
recently held the role as Sous-Chef. Since then, his strong skills and talent for menu development
have placed him in a natural leadership role. Mr. Plaster completed his Red Seal from the New
Brunswick Community College in 1994 and has since worked in some of Fredericton’s most prominent
hotel restaurants.
Another recent addition to Holiday Inn Hotel & Resort’s culinary team is Sous-Chef Troy Nicholson.
Originally from Halifax, Mr. Nicholson has over 16 years of experience in a wide variety of venues.
He is a gold medalist in the 2000 APCC (Atlantic Provinces Culinary Competition) and a Bronze
medalist in the 2002 competition. One of his greatest strengths comes from his creative plate
presentations, which have already brought positive reviews from many of the Parkview restaurant’s
regular patrons.
