Delta Fredericton Chef wins top honours at Eastern European awards
July 16, 2007 - "The Best Hotel Chef In Eastern Europe" can be found in Canada’s own backyard,
at the Delta Fredericton Hotel. Chef Hector Jiménez, the Delta’s executive chef, took top honors
at the Eastern European Hotel Chef Awards earlier this month, in Kiev, Ukraine.
"It is a great honour to be recognized for this prestigious award from a fine culinary region
like Eastern Europe," says Jiménez. “Now at the Delta Fredericton I am able to create fresh ideas
for our menus inspired by my international experiences.”
The award is considered the highest recognition a chef can receive in Eastern Europe. Presenting
the award was the Eastern Europe Chef Toques Association, an association of Chefs whose objective
is to represent the Eastern European culinary heritage.
The annual event is organized by the Chaîne des Rôtisseurs, an international gastronomic society
dedicated to bringing together both professional and non-professional members worldwide, who appreciate
and share a mutual interest in cuisine, wine and fine dining. Jiménez, who hails from Columbia,
started out at 16 as a dishwasher at Hotel Bucarica, in Bucaramanga and through hard work and
determination has made his way to the top. His international experience includes the Relais Chateaux
in Bogotá; Hilton Boston Back Bay, Boston; The Marshes Golf Club Brookstreet Resort, Ottawa; Foundation,
Byward Market, Ottawa; Radisson SAS Royal Hotel, St. Petersburg, Russia. Jiménez joined the Delta
Fredericton Hotel in April 2007.
To kick off his new role at Delta Fredericton, Jiménez has created a signature dish, tuna sashimi
ceviche. "This dish is a fusion of authentic Latin-American ceviche and Japanese sashimi technique,
he says. "I thinly slice fresh tuna, lightly marinated and perfumed with lemon squash, enhanced
with cilantro and julienne of raw vegetables infused with Nouc Cham essence. Jiménez is also working
on new menus for Bruno’s Seafood & Chophouse, DJ Purdys and the DIP Pool Bar & Grill.
